Nacho Supreme Cupcakes

My kids like LOVE anything Mexican food related, I saw a pic of these and adapted them to my own! I love how they turned out and just cant get enough of them. I am eagerly waiting for my kids to see how these turned out!!!



 
These were quite easy to make actually. At first when I first saw them I was thinking “Oh, those look complicated and all.” Anyhow, after much thought I gave it a go! So easy!

The little “nachos” were so easy to make and they are so good!
Nacho Supreme Cupcake
Recipe Type: Cupcake
Prep time: 1 hour
Total time: 1 hour
Serves: 12
Ingredients
  • 1 Box devils food cake mix
  • 1 package cream cheese
  • 1 stick softened butter
  • 1 box powdered sugar
  • 4 tortillas
  • Cinnamon sugar mix (or equal parts of both)
  • Green sour punch straws or sour gummy worms green in color
  • Strawberry jam
  • yellow and red food coloring
Instructions
  1. Make the boxed cake according to the directions on the box and set aside to cool.
  2. Take 4 tortillas cut them into small triangles (to resemble nacho chips) and top them with cinnamon sugar mixture and bake at 400 for 5-10 mins or until crisp.
  3. For frosting take softened butter & cream cheese and blend until incorporated then add to that powdered sugar until it reaches the consistency you like.
  4. Once frosting is to your liking use the yellow and red food coloring until you obtain the color of nacho cheese (I used 3 drops red and 15 yellow) it varies from brand to brand how much you need to use.
  5. Frost cakes (they do not need to be perfect, this is supposed to look like squeezed on nacho cheese remember).
  6. To the frosted cakes top that with strawberry jam, cut up green punch straws or gummy worms and “chips!’
